Coquito


Coquito is my new guilty pleasure. 🙂 It’s a Puerto Rican drink, usually made around the holidays. It’s kind of the equivalent of egg nog but WAY better and it doesn’t make us feel sick like egg nog usually does.

Here’s how we made it. It’s easy

You’ll need:

1 – 12oz can evaporated milk

1 – 14oz can sweetened condensed milk

1 – 15oz can sweetened cream of coconut (we used Coco Lopez)

1 – 14oz can coconut milk

1 cup milk (whole is best but not necessary)

1 cup water

Pour in blender and blend well

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

Ground ginger to taste (optional)

Add to blender – blend well

Pour into glass bottles or a pitcher with sealed lids. In Puerto Rico they sell the glass bottles in the grocery stores during the holidays

Drop a cinnamon stick into each bottle

Cover in the refrigerator for at least 2 hours or until very cold. We left it over night and it was perfect!

We served this in small plastic cups.

Make sure to shake the bottle before serving.

Leftovers will keep in refrigerator for about one week, if you don’t drink it first. 🙂
